My notion is that the initiating damage to the endothelial layer of the vascular wall, in many cases of vascular disease, is the result of antibody action against the body's own tissues. I suspect a dynamic of molecular mimicry underlies this autoimmune attack. This is a situation where macromolecules of partly digested food are absorbed into the blood through a damaged intestinal wall. The presence of these macromolecules incites antibody production and attack. This perspective requires sequence homology between the food particles and the endothelial tissue (one or more sequences of amino acids in the food particles are very similar to the endothelial tissue)

It is my belief that a gluten-free, dairy-free diet is likely to have a beneficial effect, as gluten and dairy are the most common dietary antigens.
